What you'll do
Vegetables play a critical role in supporting overall health. They provide fiber, essential vitamins and minerals, and plant compounds that support digestion, metabolic health, and long-term well-being. Yet many people struggle with making vegetables the foundation of satisfying meals. In this hands-on class, Chef Patricia Borsato demonstrates practical techniques for preparing vegetables in ways that are both nourishing and deeply flavourful. Participants prepare a selection of vegetable-forward dishes while exploring simple strategies for incorporating more plant-based foods into everyday cooking. The menu consists of fresh Tagliatelle with walnut, lemon, and parsley pesto; Roasted Squash with chili yogurt and cilantro sauce; and Carrot Olive Oil Scones with honey-rosemary glaze.
